Mango Honey, what is it actually?!
It has returned! One of our most anticipated coffees of the year, the Mango Honey from our friends at Gold Mountain Coffee and their Finca Idealista hailing from Nicaragua is back. We are so pleased to be working with these amazing coffee growers. This relationship began a couple years back at the SCA Coffee Expo, where we had our minds absolutely blown away by this incredible coffee.
What makes it so incredibly special? Scarcity would definitely be at the top of the list for sure. Ben and his team harvest the coffee cherries while they're in this ripening stage between greens, yellows and reds you know, the ones that look like a mango. Every year only a few bags of this coffee ever come to the specialty market, which we always make sure to grab and bring to you. This is a direct trade coffee that we have deemed worthy of our Estate Collection title.
Once the coffee cherries are selected and harvested the true alchemy begins, the honey processing. The process gets the name from the sticky (pardon the vulgar word) mucilage sack that is left on the coffee cherries prior to drying. It's a sticky, sweet and flavorful membrane that is left on the coffee cherries, imagine biting into a peach and when there is still some fruit attached to the pit, this is kind of what we're referring to. That membrane, when dried out creates a natural sweetness in the coffee that when roasted brings forth these bright and sugary sweet notes.
